Valençay is one of the tastiest goat cheeses of little cure, it is named after its hometown, Valençay in the center of France. This cheese in particular is made out of raw goat milk in the form of a truncated pyramid, covered with ashes. The young and delicious cheese has a fresh and citric taste combined with the typical flavor of goat cheese. Valençay is usually available between March and December, with peak manufacturing between April and August.
According to the legend; Valençay cheese had the shape of a perfect pyramid with a pointed top. When Napoleon returned to his castle in Valençay after a failed expedition in Egypt, this cheese was served to him without its top to not remind him of his Egyptian failure. Others believe that Napoleon himself chopped the top off with his sword out of frustration. Up to today, the mouth- watering cheese is still manufactured with this special shape.
