Healthy Toppings to combine with Don Manchego biscuits

Dry tomatoes & sunflower spread
1 cup of sunflower seeds (left to soak overnight)
½ cup Sun-dried tomatoes (rehydrate in water for at least 30 minutes)
some fresh dill
½ lemon juice
Salt and pepper
¼ cup / 60 ml of olive oil
Strain the sunflower seeds.
Add all ingredients to your food processor and process until the texture of pâté.
Adjusts the amount of water or olive oil according to your preferences.
Vegan black olives & mushrooms tapenade
Black olives (10 -15)
1 Cup of mushrooms
½ Cup of nuts (soaked in water)
1 Garlic clove
Thyme
1 tsp of miso
1 tsp of apple cider vinegar
Salt &Pepper
¼ cup or 60 ml of olive oil
Heat the olive oil in a saucepan and cook the garlic clove. Add the mushrooms cut in pieces, a bit of thyme and cook about 10-15 minutes until golden. Let it cool.
Rinse the walnuts. Add all ingredients to your food processor and process until the texture of pâté.
