Ajvar Sauce Recipe to pair with Don Manchego biscuits

1 canister of Don Manchego biscuits

Ajvar Sauce
3 red peppers
1 clove garlic
1-2 spoons of creamy tahini
salt & pepper
1 tsp. smoked paprika
2-3 spoons of olive oil
¼ cup toasted sunflower seeds (could be a little bit of Cayenne or chili flakes if you want it a bit spicy)


Preheat the oven to 180 °C.

Clean the peppers. Put them on a baking pan and bake for 25 minutes aproximately, turning them over halfway. When they are soft and “smoked” remove them from the oven and allow to cool. Remove the skin and seeds from the inside.

Put the peppers and all the ingredients in your blender and blend until creamy. Rectify the seasonning if you want.

Serve with: black olives, rocket leaves, nuts like toasted almonds and pumpkin seeds, grilled asparagus and Ajvar sauce.
